An Geadh-Glas, otherwise known to English speakers as the wild goose, is most likely the furtherest thought in one’s mind when thinking about Christianity, Christian symbolism or especially when pondering the most mysterious component of the Triune Godhead, the Holy Spirit.

Yet the early Celtic Church, that amazing amalgamation of deeply mystical Christianity and equally mystical yet enigmatic Celtic culture, saw not a docile gentle cooing dove as the supreme representative of God’s Spirit but rather the often loud, raucous, stubborn and determined goose as a more true emblematic example of God’s most untamed and fiercely determined nature–a nature much like their own.

The Celts were a fierce warrior nation comprised of the bloodlines of Vikings, Danes, Druids, Picts and members of the northern regions of ancient Albion (northern Great Britain)
The Roman Empire never occupied Ireland, nor did the Anglo Saxons who later filled the void in the Birtish Isles following the fall of Rome.

These very supertisious people were fiercely independent, steeped in their haunting pagan rituals and customs–much of which remain as a continuing mystery to modern historians and archeologists.

It is Patrick who is credited for not only having introduced Christianity to the Emerald Isle, but for being the “designer” behind what we know as the celtic cross.

It is said that the pagan Celts considered the sun to be an integral part of their worship. Circles have been found etched and carved on many excavated Celtic ruins. I think it’s rather easy to understand the importance behind worshiping the sun for the Celts— if you’ve ever spent much time in Ireland, you know how wet and grey it can be. There are parts of Ireland which receive up to 225 days of wet rainy weather each year, in turn making any and all sunny days a rare and treasured commodity.

Patrick had to be inovative if he wanted to get the Celts attention and gain their trust as the ultimate goal was total conversion and allegiance to the one true God. So Patrick set about with a brilliant plan combining both a component most important to the Celtic nation, that being the sun–a revered circle, bridging the abyss to the most important image to Christians, the Latin cross, with the addition of a circle ringing around the cross–a combination representing both sun and Son as the circle is also a Christian symbol representing God’s endlessness.

Patrick is also considered as the one person who established the shamrock as one of Ireland’s most endearing symbols. The Celts were an agrarian nation as Ireland is a rich fertile island due in part to being on the receiving end of the warming and wet energies of the Atlantic gulf stream. As an island people they were deeply connected, attuned as well as dependent on the land. So Patrick utilized those things that were common and entrenched in the common man’s life. A most humble yet prolific example being the clover. The clover was a perfect teaching tool as it so beautifully manifests the image of the Holy Trinity.

In the early days of the young Christian Church, many a humble yet determined monk of the fledgling Christian Church came and went from this mystical isle in hopes of further spreading the Gospel.
Some traveled freely while others sadly disappeared…lost in time…victims of pirates, invaders, and local hostilities.

Yet for all the anguished years of famine and immigrations, for all of her tumultuous history of waring invaders and defiant fought battles, Ireland has held fiercely fast and tight to her Christian roots. We are all aware of the growing insidious cloud of secularism that is sweeping across Europe and Western society…we are also all painfully aware of Ireland’s past “troubles”—the deep and often bloody mistrust and resentment between north and south, Catholic and Protestant, British Crown and Independent…yet despite all the years of bloodshed, turmoil, both internal and external, Ireland has laid claim and held on undeterred to her faith…a faith of deep respect for the God of all Salvation as well as the Great Creator of both land and sea, heaven and sky.

The horses are probably 25 years old, and when you see one, you see the other–always together in tandem. Today they looked much as I have felt.

A diversion!
That’s it, a diversion. . .
We need a diversion!!!!
Actually we really need to hop on a plane, flying “down under” to our friends in the Southern Hemisphere for a quick visit as I hear they’re in the midst of a heat wave.
Really.
But since we must follow practicalities, we need a more readily available diversion.

Consider the pear.
What?
Yes, the pear.

When I was a little girl, I can remember my grandparents, always this time of year, receiving a box of crisp fresh pears. . .from some exotic far away land like, say, Florida or California. Why they couldn’t go the grocery store like my mother would, in order to purchase the mealy overly ripe heavily bruised variety, was beyond my young comprehension. And if the truth be told, the pears my mom bought actually came in cans.
What??
You’ve never seen the canned pear tree!!??

Those being the heady days before “health”. . .

Mother would serve them, as most folks during those dark days of canned, store bought, prepackaged, processed, readily available foods, drained and perched on a bed of iceberg lettuce (the only lettuce my dad believes in) accented with a dollop of the real deal, nothing low-fat about it, mayonnaise topped with a smattering of grated cheddar cheese.
Voila the ubiquitous Pear Salad of the 1960’s.

Of course there was that exotic French Liqueur, found when I tagged along with my Dad, as a little girl, to the local liquor store for his weekly run for beer, Poire Williams— the one with a real full sized pear floating in a bottle of clear liquid —the mystery I never could figure out. . .as in how they got the actual pear inside the bottle. . .and not understanding why dad wouldn’t buy me the bottle so I could investigate further.

Yep.
That pretty much sums up what was my full knowledge of pears. . .until I finally grew up.

There’s nothing better than a perfectly cool, crisp, juicy pear.
You know, the one whose juices dribble down your chin as you take each tenderly sweet bite after bite. . .but as Mr Emerson so blatantly reminds us at the start of the post, that time of perfection is but a very narrow window.

In my quest and need of and for diversion from the constant grey outside my window, I opted to poke around for a new recipe—something fun to cook in order to take my mind off of the cold grey outside and the fact that I threw all gluten out the window over a week ago. . .just to see if it could help an ailing GI tract and shed this weight that seems to have hunkered down for the duration (more on that later).

Not looking for anything to do with pears, or fruit for that matter, a recipe jumped out at me concerning the poaching of pears in a delicious sounding concoction of sugar, spices and water.
Hummm.
Never being one to poach my fruit nor believing in any sort of dessert other than that of chocolate and cream, I was a bit intrigued. I figured I could poach a couple of pears and have them as part of a salad.

Heading to the store, I purchased 4 organic (of course) Bosc pears. You know, the pretty pears which are beautifully shaped, well, like a pear.

The recipe called for 8 pears but in a household of two, I opted on 4 pears, yet I still used the full recipe of poaching liquid which worked out perfectly.

I thought you’d never ask. . .

You’ll need 4 to 8 Bosc pears (they hold their shape the best)
2 cups sugar ( I know it sounds excessive but it’s just a part of the “bath”)
8 cups water—however I used 2 cups of leftover champagne I had sitting in the fridge since New Year’s Eve along with 6 cups of water. You could use some white wine if you’d like. . .
1 Vanilla bean split
1/2 a lemon –I used a Meyer lemon
a small handful of whole cloves about 8 or so
1 cinnamon stick or 2 if you’re feeling adventuresome
1 star anise— since I didn’t have that, I used about 1/4 teaspoon of anise seed– oh so judiciously as I’m not into licorice.
And wishing I had thought to throw in a cardamon pod or three

Put all ingredients in a large pot and bring to a boil, immediately dropping down to a low simmer—
mmmmmmm can’t you smell that warm spicy aroma now just filling your kitchen??

In the meanwhile, peel your pears.

Slice them in half and using a teaspoon, gently scoop out the seeds.
Once the sugar has dissolved, put the pears gently in the “bath”–cover and simmer for about 20 minutes or until the pears are soft (test by gently poking with the tip of a knife)

Once the pears are soft and your house smells heavenly, remove the pot from the heat and allow the pears to cool in their bath.
At this point you can put the whole pot in the fridge, allowing the pears to rest in the “broth” chilling nicely. Sampling with a small spoon of the “bath water” I decided I could drink the whole pot.

What I did with my pears was to make a salad.
I tore up some romaine lettuce (the kind Dad does not consider real lettuce), placing it on a salad plate.
I next sprinkled some blue cheese crumbles (you can use Gorgonzola) over the lettuce and drizzled blue cheese dressing over the salad in training. I then placed a single pear half on the bed of lettuce. You can certainly slice it in half if you prefer.
I put a small dollop of mascarpone cheese in the center of the pear (you could use cream cheese or blue cheese), sprinkled a few sugared walnuts around, finally drizzling the remainder of the apple cider sugar glaze I used for the walnuts, over the pear and lettuce.
Voila—the new 21st century pear salad

Oh here’s what I did to the walnuts. . .
In a small sauce pan I put in about a 1/2 cup of sugar. I turned the heat up to med-high, watching it like a hawk so it wouldn’t burn, get away from me and set the house on fire.
As the sugar began to melt, turning to a liquid, I used a small wooden spoon to stir it.
Just as soon as the sugar melted, I slowly poured about a 1/4 cup of apple cider in the pan, continually stirring as the sugar now wanted to clump and harden back up. I continued stirring allowing my mixture to boil, adding about a TBL or two of Maple syrup. I allowed this to boil down, reducing into a thick syrup, at which point I dropped in a handful of walnuts ( 3/4 to 1 cup)—allowing them to get a good coating of the syrup.
Next I poured the syrupy nuts onto a dry plate allowing them to cool.
I then placed them willy nilly on the salad, drizzling the pear and salad with the remaining syrup. . .
Absolutely divine–light, refreshing and oh so tasty

Ode to the tempest of weather

****I realize some of you are wondering why I posted twice yesterday. I actually posted once, when I thought my son was just about to take the LSAT, however after he called with his bad frustrating news, I pulled the post, amended it, and reposted it reflecting his troubling news. Therefore the second posting was indeed the more current of the two. All I can do is humbly ask for prayers—that I may provide comfort as well as be comforted in my lack of understanding and frustration as a mother. How to console a grown child when his heart is broken, only for the umpteenth time. . .

These shots were taken Thursday evening. It was the first glimpse of color, from what I assumed to be the sun, which we had not seen in truly 7 days—just as it was setting. A tease of what could have been. I don’t mind rain. I don’t mind fog. I don’t mind drizzle. I don’t mind wind (well, that depends on whether it’s a good hair day or not). I don’t mind sleet, I don’t snow. But excess, well that’s another story. Nor am I a fan of the fury of any of the aforementioned weather events.

I worry for the trees–will they be blown over? Will they bend and break under the heavy ice? Will they simply uproot due to the saturated soil? I worry about driving in fog, sleet and rain. I’ve witnessed one too many catastrophes due to wet and / or icy roads.

Lightning and thunder scare the crap out of me. Remember the tree picture I posted a month or so ago? One minute a tree, the next minute a splintered toothpick, along with 5 pictures blown off the walls in the house. Yep, just looove that lighting.

For me, I think that the most troubling aspect of this phenomena known as weather lies with the unseasonableness and unexpectedness of it all. I think that’s what seems to vex me most. Perhaps it is due to the fact that there is an innate connection between our rhythm of life and this living breathing earth of ours. When the cadence is altered, I am altered. My mood shifts from placid and content to agitated, sullen and often as dreary as the day.

I’m not saying that everything should be sun and roses by any means, as I do love a good rainy day. I love that first gentle snow that blankets the earth in pristine silence. I love the anticipation of a summer’s storm. Its presence announced first by the scent of the unmistakable perfume of the earthy rain followed by the distant rumble to thunder which only grows in intensity. I love the change of seasons. The ebb and flow of the weather mirrors my own life’s ebb and flow.

It is however those endless days of grey and gloom— those days of excessive heat sans breeze or heavenly rains, which try my soul to no end. The day in and day outness of it all. Perhaps it is the lack of change, the lack of new that weighs me down with a semiconscious melancholy spirit. To wake each morning, ritually opening the shutters in anticipation of what will lay ahead for the day—only to discover that today is just a reoccurrence of the day before and of the day before that.

And just when it seemed that it would rain forever, that the skies would hide behind the grey heavy clouds, that the heaviness of the air would crush me with it’s weight, suddenly, unexpectedly there is a shift. A parting of the heavens. The light emerges, the winds shift, the mood lifts. There is indeed hope after all.

Here is to the hope of sunnier skies, drier roads, straighter trees, calmer winds, smoother waters, seasonal temperatures. . .here is always to Hope.
